The service is always running and is probably designed to be protected from anything (e.g. malware) trying to 'disable' it.

You can temporarily switch off real-time protection by switching 'Virus Shield' to OFF in the user interface.

How do I disable scanning of particular files and/or folders?

I don't think that is possible in this 'Free Edition'.
