Update for 1.
Saw a 2024 post requesting updates at log on, one comment that appears to solve problem was to turn off fast startup in the control panel power options. I did this and it appears to work, update was performed within 5 minutes of start up!
Question 2 remains - is the computer unprotected when Bitdefender is going through a configuration process and snoozed?

Again discovered an old post about Bitdefender snoozing during updates, response was Bitdefender has several services running and when one is stopped to update others are still running protecting the computer. I am not technical enough to check & confirm that, but since Bitdefender is always highly rated, I will take it as factual!
Takeaway for all this, is to be more diligent searching for solutions before posting!!
