I notice that windows update was turned off from auto, that core isolations was turned off, Microsoft defender was turned off. who knows what else at this point. I feel like i should be concerned, should I?

If the changes occured after installing Bitdefender, then it's normal. During the setup, Bitdefender identifies other security products that were previously installed, in this case Windows Defender. To ensure these different security solutions will not cause difficulties, you will be advised to uninstall them. So, Bitdefender actually replaces Windows Defender in this scenario.
Having two or more security solutions installed at the same time can have a negative impact on your computer. The symptoms may include but are not limited to degraded performance, system crashes, and software errors.
As for Windows updates, you can turn that feature back on I suppose.
