I want to reinstall Windows to a different version, and I'm wondering if my Bitdefender antivirus will continue to work or if it will require me to re-register the device as a new one?

You'll have to reinstall Bitdefender from your Central account. But before that, make sure to remove the previous device/installation from Central, even if it's the same one. This way you can start with a fresh installation and it will not take an additional slot from your license/subscription.
So, the first step would be to remove the device to free up the slot, then once you got your new Windows up and running, access your Central account to reinstall protection on that device.

Does this also work if will change the system from windows to linux? I'm using windows for games and thinking about changing windows to linux for games now, does antivirus gonna work on linux as it was on windows?

Bitdefender is not supported on Linux. It's been asked here on the forum before, but there isn't enough overall demand for Bitdefender to try to support…how many flavors of Linux and which one? That the OS versions which Bitdefender does cover, is enough for the engineers to keep up with for now :)
