Why does bitdefender block my outgoing mac mail and/or gmail?

It happens to me as well. I have to turno off the VPN in Premium security

I am finding that I get the exclamation wanring mark next to each email account in Mail, but that emails are still coming in and seem to be going out. It is disconcerting and befuddling.

It's possible that the email provider has blacklisted the IP of the VPN server, as this may happen sometimes.
First thing, check if it happens when connecting to different countries. Usually, this can be solved if you contact the email provider and ask them to remove that particular IP from the blacklist, if that's the case.If not, check the below article for troubleshooting steps that are usually known to work in this scenario:

Split tunnelling as described is not an option on MacOS, so I tried another country's server, in this case Belgium's.
Alas the warning icons appear as they did when using the local (UK) server.

I did some research on this and it seems that it's a known issue for the VPN on MacOS. I would recommend to get in touch with Bitdefender Support, so they can add your report to the list and update you as soon as the situation is resolved by the development teams. You can use the link below to get in touch with the Support engineers:
State your contact reason / choose request category, then choose from the available contact channels, chat, phone and email/ticket. Chat would be the fastest way to reach them.
