How do you add multiple email accounts in the Email Protection section?

What email client are you trying to add? I'm asking because Email Protection only works with Gmail and Outlook email providers. As far as I know, the Individual plan protects up to 2 inboxes per subscription. This limit is specific to each subscription with Email Protection, not to your Bitdefender Central user account. I think that @Gjoksi may use a previous version that could monitor more accounts, but according to this article, only 2 mailboxes can be covered:

Hi there - I've just come across this issue myself - however I should point out that the user manual for BitDefender Premium clearly states "You can protect up to 5 different email accounts" under section 1.2.4.
This makes no sense at all to me, why have 5 devices protected but only 2 email addresses being protected. The manual is quite misleading in this respect. The AI chatbot says it will forward my complaints on but I'm not very hopeful.

I think it's possible that the user guide may not be updated here. But it's just an assumption. Can you share a screenshot of the section you are referring to? I could not find this paragraph in the Premium Security user guide, but I might not be looking in the right place, so a picture would help.
The Support chatbot will definitely forward your feedback to the appropriate team, namely the technical writers responsible for updating the supporting documentation.

Here is the screenshot you asked for - this is from the Bitdefender Premium Security PDF.
As you can see it does say 5 different email accounts in the documentation - perhaps more importantly though if the actual restriction is for 2 email accounts only this should be made quite clear on the Bitdefender web pages.
My subscription is for 5 devices but 3 of them can't have email protection - not sure how I decide which 3 don't need it?

With Bitdefender installed, you will be protected online regardless if this feature is enabled for all your email addresses or not. The software protects against cyberattacks through a set of features that scan different areas of your device. One of the features, Web Protection (Online Threat Prevention), is designed to scan all web traffic and block any malicious content – infected URLs, untrusted web pages, fraudulent and phishing links that may be inserted in emails, etc.
When it comes to email security, perhaps the first line of defense is the spam filter, and that is also integrated with your security solution and it filters junk e-mail from legit messages. A good antispam filter blocks the phishing attempt in its early stage.
Another layer of defense is the anti-phishing or anti-fraud module – another component of the antivirus that analyzes the web page you land on and determines whether it has been designed to steal your data. Even if you have fallen for the scam and opened the phishing message, the anti-phishing module should prevent you from filling in the form with your sensitive information.
The additional Email Protection feature detects spam, malicious and phishing emails when you check your emails in a browser only, and it labels them, so you know which ones are dangerous even before opening them. It's nice to have, and a good feature, but lacking it for your email address doesn't mean that you will be less protected against threats that circulate via email, since Bitdefender offers real-time protection.

I was originally on Bitdefender Total Security which was due for renewal, but during the renewal process I was offered an "upgrade" to Bitdefender Premium Security which specifically mentioned email protection as a new feature - that's why I went for it - there was no mention of a 2 email limit at all.
I now think I would have been better staying on Bitdefender Total Security. Would it be possible to switch back to Total Security?
I have cancelled my automatic subscription as I don't intend to renew in the future unless there is a compelling reason to do so - I'm having issues with the new version too - the auto-update function does not work on one PC - you have to keep doing it manually even though the setting is to update automatically.

Yes, I know there was a campaign in some localizations where an upgrade from Total Security to Premium Security was offered. This was not available worldwide and I'm not sure if this is ongoing or not.
Essentially, Total Security is at the core of Premium Security as well, that would be the antivirus solution and the other one is actually an all-in-one plan. If you ask me, in the event you got a good deal on Premium, I would stick with it. Because it comes with a fully featured password manager, and a powerful VPN with unlimited traffic. So, I think it's good value for money. You could check how much would these cost when purchased individually, then compare to what you have paid for the upgrade, and decide if this is worth having or not. In any case, you can always request a refund for your Premium Security suite within 30 days of your initial purchase, and go back to Total Security afterwards. It's your call, but like I said, if the discount was right, you can keep PS because it's a better package overall. Should you consider a refund, I'll share a link where you can send your request, not a problem.
As for the auto-update function, can you tell me if this has previously worked as expected on that device, or of this is something that occurred after upgrading to Premium Security? Does the automatic update fail, or it's not initiated at all? If it fails, do you encounter any error message? Is there anything different on that device, when compared to others where this doesn't happen? Any particular software, for example another security solution, firewall or VPN in use? There can be numerous reasons behind this and it doesn't really have to do with the actual antivirus package, as this should normally update like the previous one did. Except if something on that device is preventing Bitdefender from connecting to its update servers automatically.
Thanks for your detailed response - can I ask the following:
Does the TOTAL SECURITY package have the same limitations on email accounts as the PREMIUM SECURITY version (eg 2 accounts only) - does it even have email protection? - the impression I got is that the upgrade from Total to Premium added email protection as a new feature.
I will investigate the VPN and Secure password options but I already have hardware/software in place so not sure how useful these will be.

It's unavailable for Total Security.
I understand, if you already have a password manager and a VPN as well, and you are happy with your choice, then it may not make that much sense to upgrade to Premium Security. Like I said earlier, if the purchase is within 30 days, you can ask for a refund and perhaps a more advantageous offer to go back to Total Security, while you're at it. They may actually provide you with an additional discount, you just need to get in touch and the Support team will take good care of you, if you are not satisfied with the current subscription. 😉
