VPN Protocols
I'm kinda new to all this and a bit confused.
When I use "Auto", "Wireguard" or "IKEv2", everything is fine but when I try to use "OpenVPN" with either TCP or UDP, I get blocked from the internet.
I've seen another post from last year about this but did not find a real solution other than a temp solution to change the DNS server to 8.8.8.8.
What am I missing?

Try a different adaptor (if you have that), for example if you're using the ethernet port switch to the Wi-Fi to see if this might be causing your issue.
Otherwise you can try resetting the network adaptors by running the windows troubleshooter for that, windows will then reinstall your adaptor drivers and settings to default.

You should be able to change the port when scramble is off not on.

Have you tried changing the port in the openVPN and try it with the scramble setting on/off.

The port defaults to 3074 and won't let me change it
