I am having an issue with the bitdefender antivirus process eating up all of my system RAM.

As you can see below it is using excessive amounts (16GB here but I have seen as high as 27GB)

It slowly grows over time (approximately 1GB per 30mins) and will eventually stop the computer from responding at all.

I followed the instructions in this thread to completely reinstall bitdefender and the issue is exactly the same.

As already replied in the stated link provided by you :

If the issue persists, generate bitdefender logs (https://www.bitdefender.com/consumer/support/answer/1922/) & kindly drop an email to bitdefender support at bitsy@bitdefender.com .Briefly explain them your issue and also attach the bitdefender logs in the same mail. Also attach the new screenshot from task manager showing the realtime memory consumption at that time.

The support team will reply back in maximum of 72 hours excluding saturday & sunday in most cases.

If bdservicehost is using too much of your CPU or memory, we recommend ... Having your BitDefender antivirus consume a large amount of your resources ... your RAM and disk, or try to reduce bdservicehost.exe CPU/disk usage. ... I tweaked a few settings in bitdefender a month back and after a couple days maybe I also stated having same issue, I had 8gb ram but overtime it would start eating my ram making my PC sluggish. Now after few tweaks here and there when I disabled "silent update" Under "Settings - Update" Tab and Restart PC, I didn't face the issue again, though after every few hours I get update notification, but its better than having my PC slowed down altogether. Don't if it was just me or not but Hope it helps others...
