Are you talking about Upgrades (the build number changes and a computer restart has to be done) or just Updates (d/l of virus definitions)?
The server you list is the default and for me works relatively quickly. I don't know of a way to increase the update interval above 12 hours other than changing the update rules to "Prompt before downloading - then it is up to you when you do it. Delaying updates is not a good idea as you may not be fully protected. Setting the update to every hour works fine for me because there is less to download each time, waiting 12 hour plus means a lot more to download, thus taking longer.

upgr-mmxvi.cdn.bitdefender.net: I have the same in my Update General Settings.
It's used by used by downloader.exe. Pinged, it returns an IP address for EdgeCast in Santa Monica, California.
However, during the download there are other connections involved: ProductAgentService.exe and vsserv.exe consistently to Romania and seccenter.exe to Amazon in Boardman, Oregon. I think that complexity depends on the nature of the updates - sigs for AV, AVC, spam, etc. etc. And, of course, product upgrades.
But it does sometimes take up to three minutes to do an update for a few KB of sig updates, generally about 45-75 seconds. I can live with that; it doesn't bother anything on my system while it's happening.
BTW vsserv.exe has connectivity far more varied, global actually, during normal browsing and other apps' network activity and I assume that's for malicious Web/IP filtering. Mine just went out to Frankfurt, Germany.0 -

Forgot to mention, I have 50 Mbps cable broadband and 1 Gbps wired LAN. The downloads trickle in 50-150 Kbps, mostly in the double digits.0
