My Windows 10 keeps asking to install Windows 11 - Should I do it OR not...?

First of all, does your device meet the requirements to run Windows 11? Even though you may be prompted to, you still need to confirm it. If in Windows 10 Update it doesn't allow you to confirm your devices ability, you could run the PC Health Check app from here:
Otherwise, it's just a personal preference or comfort zone call. I personally would upgrade all my PCs I could to 11, to keep up with the new version as to not get to far behind in keeping up with the newer settings, features, updates etc. But others would say stay on 10.
So it can be a 50/50 call.
