Hello.
Open your Bitdefender program, go to Utilities -> Profiles -> Settings, first switch off / disable "Activate profiles automatically" and next switch on / enable "Game Profile".
When Game Profile is activated / enabled you'll see an icon on the Bitdefender interface.
When you'll click on the icon, you will be redirected to the Profiles pane, where you can deactivate / disable the Game Profile function by switching off the slider, as shown in the first picture.
If you switch on / enable "Activate profiles automatically", it means that the Bitdefender program will automatically activate the profile that is right for your device, but it doesn't mean that it would be Game Profile, as it could be Movie Profile, Work Profile or other profile activated by the program.

Hi. I cannot disable game mode! I switch it off, but the icon still shows in the app top right side. I have noticed it turns itself on when I minimize to the system tray.
I don't know why this happens.
After minimizing to the system tray and then reopening it, game mode is set to on.

If the 'Game Mode' does not behave as expected, try to repair Bitdefender by following the steps described in this article:
If the situation persists afterwards, then I think it's a task for the Support engineers to further investigate.

Does anyone know if these profiles consist of a file that you can backup? I've had a couple of instances where an upgrade went astray and my "games" list (nearly 100 games in total) was lost and I had to re-input them all again. If these exist in a dat or xml file that would be an easy protection against this in the future.

Hello,
Unfortunately, there is no backup option in Bitdefender. And without the ability in BD to "restore" those settings or by manually copying them into and from a BD folder, can't be done. The ProfilesData folder gives no sign of a Games List/Setting folder when those are created.
Unless @Alexandru_BD has an idea or knows otherwise.

As @Scott already said, Bitdefender doesn’t provide a direct export feature for the profile settings. Also, Bitdefender profiles aren't stored in a readily accessible file like a DAT or XML.
