Is it possible to be infected with trojan without Bitdefender noticing it?
Hello, my email account got hacked and the hacker send me an email from my own account where he wrote down my password and said that there is now a trojan on my device and explained why my antivirus didn't notice it. I usually don't pay attention to emails like that but I just want to make sure that everything he says in that email is a lie and that he couldn't possibly acces all my documents with Bitdefender active on my computer.
And yes, I realize how stupid I sound but I wanna make sure.

Well, this question is a little bit tricky to answer.
One should know that not every vendor can detect each and every type of malware. Every second a new malware is created and we cannot expect the antimalware solution to protect us from them at the same time. Though nowadays almost all antimalware come with behaviour blocking, machine learning including bitdefender but still no antimalware vendor can protect you from each and every threat.
As far as your email goes, until and unless there will be no file downloaded on your system, you are safe from malwares. As per your query the hacker had gained access to your email but not your computer. Hence you are currently safe.

I just had the same thing happen. I have received hundreds of "Undelivered Mail" emails I didn't send, and several people from my contacts have called to report they received suspicious emails from me I didn't send. Bitdefender says I am safe. I changed my email password but it's still happening.

Kindly contact your email service provider like google, yahoo, microsoft etc for this.
The issue is not from bitdefender end and bitdefender cannot stop someone from sending you a spam email. But yes, if in that spam email there is a phishing or malicious link and that particular link is in bitdefender database, bitdefender will surely block the page if you try to open the link.

Surely Bit Defender is familiar with the phishing link "App.Ads.fiancetrack(2).dll" I subscribed to Bit Defender today for PC and phone and ran the scan, because yesterday I stupidly thought the Windows icon on the scare message that popped up on my internet screen was valid. (It said "Access to this PC has been blocked for security reasons. Contact Windows Support 206-865-6868 to restore access and protect your accounts") The phishers now have access to my financial accounts, and my ID also(!) And it's a 3-day weekend. Today's Bit Defender did NOT find evidence of any recent breaches. Why didn't Bit Defender find this 6-17-23 activity, especially since it is probably STILL ACTIVE in my computer & phone?!

Since you are all done, just wait for the support engineers to investigate your issue and find a solution to fix the issue.
Remember that the screenshot(s) and the log files will help a lot to the support engineers for better and faster investigation on your issue and finding a solution.
